For the quiche :

  • 1 ready-to-roll shortcrust pastry
  • 2 eggs
  • 2 large spoonfuls heavy cream (light or full-fat)
  • Freshly ground pepper
  • A good handful of grated cheese
  • Fresh coriander

For the tomato sauce :

  • 400 g crushed tomatoes
  • olive oil
  • 1 teaspoon chili flakes (or fresh chili, whichever you prefer)
  • Paprika
  • Salt
  • 1 teaspoon cumin
  • Finely chopped coriander

And for the Kefta meatballs :

  • 250 g to 300 g lean ground meat
  • 1 red onion
  • 1/2 red bell pepper
  • 1/3 bunch fresh coriander
  • Ground ginger and cumin
  • Salt
  • Olive oil

Step 1: Tomato reduction

Start by reducing the crushed tomatoes in a drizzle of olive oil. Add a pinch of paprika, cumin and salt. Cover the mixture and cook until thickened. When the mixture is ready, squeeze the tomatoes to obtain a smooth purée. Set aside for later.

Step 2: Preparing the kefta meat

Chop the onion, bell pepper, chilli and coriander finely. Mix these aromatic vegetables with the minced meat, spices, a pinch of salt and a drizzle of olive oil. Mix all ingredients thoroughly to obtain a smooth kefta meat mixture. Shape the mixture into tasty meatballs.

Unroll the shortcrust pastry and line a baking tin with it. Spread an even layer of tomato purée over the pastry and sprinkle with freshly chopped coriander. Arrange the kefta balls evenly over the surface, leaving a little space between each one.
