For the Pastry:
- High-quality pure butter puff pastry (store-bought or homemade)
For the Plum Filling:
- 1 kilogram of ripe Lorraine plums
- 1 sachet of vanilla sugar
For the Pastry Cream:
- 20 centiliters of milk
- 2 egg yolks
- 25 grams of all-purpose flour or cornflour
- 1/2 vanilla pod (seeds scraped out)
- 40 grams of caster sugar
For the Almond Cream:
- 1 egg yolk
- 30 grams of sugar
- 40 grams of butter
- 40 grams of almond powder
How to prepare a delicious mirabelle plum tart:

- Begin by gently washing and drying the plums with a cloth to remove their bloom.
- Cut the plums in half and remove the stones, taking care not to cut the fruit all the way through so that it remains whole.
- In a bowl, whisk the egg yolks with the sugar until well combined, then stir in the flour until smooth.
- In another saucepan, bring the milk to the boil with the scraped vanilla pod.
- Gradually pour the hot milk over the egg mixture in three batches, stirring continuously, then return the mixture to the saucepan and heat over low heat until it thickens and becomes a smooth custard.
- When the cream begins to simmer, remove from the heat and transfer to a bowl. Cover the bowl with cling film and place in the fridge to cool.
- To prepare the almond cream, cream the butter and add the sugar, mixing until smooth. Stir in the egg and almond powder to obtain a delicious almond mixture.
- Once the custard has cooled, combine it with the almond mixture to create a delicious tart filling.
- Roll out the puff pastry on a baking sheet or griddle and place gently on top.
