When preparing risotto, it is imperative to use a broad, heavy-bottomed pan that allows the rice to be evenly distributed during stirring. Begin by gently sautéing chopped onions in butter, ensuring that the rice becomes coated with the flavorful mixture. If using wine, add it after sautéing the rice and onion, and let it simmer until fully absorbed before ladling in the stock.

The hot stock should be added in 3-4 ladlefuls at a time, ensuring that each ladleful is absorbed before adding the next. Stir the rice frequently during this process to release the starch and enhance the creamy texture of the risotto.

The final step is known as ‘Mantecatura.’ Off the heat, whisk butter into the risotto, followed by grated Parmesan cheese. Let the rice rest for 1-2 minutes to allow the butter and cheese to melt.

The perfectly cooked risotto should be tender with a slight al dente quality in the center. It should have a sumptuously creamy texture with individual rice grains. The traditional consistency is somewhat fluid, but you can adjust it to your preference.
