Risotto is an esteemed and widely beloved rice dish that undergoes a slow and meticulous cooking process in hot stock, whether it’s beef, vegetable, or chicken. This culinary masterpiece is characterized by its velvety, creamy texture. The rice used in risotto is typically a medium to short-grain variety, rich in amylopectin (a branched starch) and low in amylose (a linear starch). This type of rice readily absorbs liquid and releases starch, leading to the luscious consistency that defines risotto.

Often referred to as the “pasta of Northern Italy,” risotto has its roots in the rice-growing regions of the north.
