Healthy Cottage Cheese Pancakes

These pancakes were crafted using all-purpose flour, though you can easily substitute whole wheat flour, oat flour, or quick-cooking oats for a boost in fiber content. Cottage Cheese Pancakes

Featuring a delightful crispy exterior and a fluffy interior, these cottage cheese pancakes are a rapid and convenient morning treat that you can savor any day of the week.


  • 1 cup of cottage cheese
  • 2 eggs, beaten
  • 2 tablespoons of melted butter
  • 1/2 teaspoon of vanilla extract
  • 1 cup of all-purpose flour
  • 2 tablespoons of sugar
  • 1 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 1/4 cup of milk, plus more if needed


  • In a large bowl, combine the wet ingredients: cottage cheese, beaten eggs, melted butter, and vanilla extract.
  • In a medium bowl, combine the dry ingredients: flour, sugar, baking powder, and salt.
  • Combine the dry ingredients with the wet mixture and blend thoroughly. Add milk to the mixture and stir to achieve your desired consistency, adding more milk as necessary to thin the batter.
  • Preheat a griddle or pan over medium heat, add a dab of butter, and allow it to melt. Working in batches, pour 1/4 cup of batter onto the griddle or pan, and cook until golden brown, approximately 1-2 minutes per side.
