In a large bowl, combine the wet ingredients: cottage cheese, beaten eggs, melted butter, and vanilla extract.
In a medium bowl, combine the dry ingredients: flour, sugar, baking powder, and salt.
Combine the dry ingredients with the wet mixture and blend thoroughly. Add milk to the mixture and stir to achieve your desired consistency, adding more milk as necessary to thin the batter.
Preheat a griddle or pan over medium heat, add a dab of butter, and allow it to melt. Working in batches, pour 1/4 cup of batter onto the griddle or pan, and cook until golden brown, approximately 1-2 minutes per side.
Repeat this process until all the batter is used. You can keep the cooked pancakes warm in the oven at 200°F.
Once finished, serve the pancakes with your choice of berries and/or a drizzle of maple syrup.
