Flourless Chocolate Chip Blondies (Gluten-Free)

Ingredients

  • 1 can (14oz) chickpeas, drained and rinsed
  • 1/2 cup peanut butter, almond butter, or cashew butter
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1/3 cup chocolate chips

Instructions

  • Preheat the oven to 350°F.
  • Grease an 8 x 8-inch baking pan with either butter or coconut oil and set it aside. If you use a 9 x 9-inch pan, the squares will be slightly shorter in height.
  • In a food processor or blender, combine all the ingredients (excluding the chocolate chips) and blend until thoroughly mixed, forming a thick and sticky batter.
  • After blending, gently fold in the chocolate chips to ensure even distribution within the batter.
  • Pour the batter into the prepared baking pan and use a spatula to evenly spread it across the pan.
  • Place the pan in the oven and bake for 20-25 minutes, or until the top turns golden brown and a toothpick inserted comes out clean.
  • Once baked, allow the gluten-free chocolate chip squares to cool completely before slicing them into 9 pieces.
  • Store them in an airtight container for up to 5 days, or in the freezer for several months.
