Step 1: Prepare Your Ingredients
Before you begin cooking, ensure all ingredients are prepped and ready. Cut chicken into even, bite-sized pieces (about 1-inch cubes) for consistent cooking. Mince garlic and grate cheese if using fresh. Having everything ready creates a smooth cooking process.
Step 2: Cook the Pasta
Bring a large pot of water to a rolling boil. Add 1 tablespoon of salt to the water (this flavors the pasta from within). Add fettuccine and cook until al dente according to package directions, usually 8-10 minutes. Reserve 1/2 cup of pasta water before draining.
Step 3: Cook the Chicken
While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add chicken pieces, season with salt and pepper, and cook until golden brown and no longer pink inside, about 6-8 minutes. Remove chicken to a plate and cover to keep warm.
Step 4: Create the Alfredo Sauce
In the same skillet (no need to clean it), reduce heat to medium and add butter. Once melted, add minced garlic and sauté for 30 seconds until fragrant but not browned. Pour in heavy cream, stirring constantly, and bring to a gentle simmer.
Step 5: Add the Cheese
Reduce heat to low and gradually whisk in the Parmesan cheese until completely melted and sauce is smooth. If sauce seems too thick, add a splash of the reserved pasta water. Season with salt, pepper, and nutmeg if using.
Step 6: Combine Everything
Return the cooked chicken to the skillet with the sauce. Add the drained pasta and toss everything together until well coated. If needed, add more reserved pasta water, a tablespoon at a time, to reach desired consistency.
Step 7: Serve and Garnish
Transfer to serving plates immediately while hot. Garnish with additional Parmesan cheese, freshly ground black pepper, and chopped parsley. Serve with garlic bread or a simple side salad for a complete meal.
