2 medium carrots, shredded (approximately 3/4 cup)
3/4 cup walnuts
3/4 cup pecans
3/4 cup dried dates
1/4 cup dried apricots, roughly chopped
1/2 tablespoon ground cinnamon
1 teaspoon ground ginger
1 teaspoon ground nutmeg
1 teaspoon vanilla extract
1/8 teaspoon sea salt
2 tablespoons maple syrup (optional)
1/2 cup shredded coconut
Instructions
In a food processor, combine walnuts, pecans, and spices; pulse until a coarse meal forms.
Once the nuts are ground, add dried dates, apricots, vanilla extract, maple syrup (if desired), shredded carrots, and sea salt. Blend in the food processor until a thick paste is achieved.
The addition of maple syrup is optional; taste your mixture for sweetness and add maple syrup as needed.
Shape the mixture into golf ball-sized balls and set them aside.
Place shredded coconut in a small bowl and coat each rolled ball with coconut one at a time.
Store the energy bites in an airtight container in the refrigerator or freezer. They will stay fresh in the refrigerator for up to a week or in the freezer for several months.
