Carrot Cake Energy Bites (Healthy!)

Ingredients

  • 2 medium carrots, shredded (approximately 3/4 cup)
  • 3/4 cup walnuts
  • 3/4 cup pecans
  • 3/4 cup dried dates
  • 1/4 cup dried apricots, roughly chopped
  • 1/2 tablespoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon sea salt
  • 2 tablespoons maple syrup (optional)
  • 1/2 cup shredded coconut

Instructions

  • In a food processor, combine walnuts, pecans, and spices; pulse until a coarse meal forms.
  • Once the nuts are ground, add dried dates, apricots, vanilla extract, maple syrup (if desired), shredded carrots, and sea salt. Blend in the food processor until a thick paste is achieved.
  • The addition of maple syrup is optional; taste your mixture for sweetness and add maple syrup as needed.
  • Shape the mixture into golf ball-sized balls and set them aside.
  • Place shredded coconut in a small bowl and coat each rolled ball with coconut one at a time.
  • Store the energy bites in an airtight container in the refrigerator or freezer. They will stay fresh in the refrigerator for up to a week or in the freezer for several months.
