Can I use chicken breast or thighs instead?
You can, but you won’t get the same deliciousness as using the whole chicken. But if you’re in a pinch and that’s all you have, I suggest layering pickle slices over the top of the chicken breast.

I like to serve mine with some fresh vegetables (green beans, corn, or asparagus) or a salad. Fresh cookies are always a winner too!
